‘I was a corporate lawyer working in a Dublin office for 30 years – now I spend my days farming olive oil in Tuscany’

When Laura and Ed Miller had their first vacation together in Italy, it was a much-needed break from their corporate lives back in Dublin. A quarter of a century later, they find themselves back in Maremma – a coastal corner Tuscany where they now farm 900 olive trees to produce olive oil from their 30 ac farm.

“We always had the idea that once our three children finished school, we would move out of Ireland,” says Laura. “Our first holiday was to Italy. We’ve been back every single year since. On one of those trips, we found this abandoned farm in Maremma and we never looked back.”
